Pumpkin, Chickpea and Broccoli Curry

OK so the picture does not do this dish justice........I am no professional photographer or food blogger!
I promise it tastes a lot better than it looks and when the kids eat a whole plate of vegetables without batting an eyelid..... you know it's good!
I serve this curry with cauliflower fried rice for added vege goodness! Simply grate a whole cauliflower and stir fry in a wok for 5 minutes - or until just starting to turn translucent. You still want a little bit of bite! I season with a little sea salt as I am cooking.
1 head of broccoli
I can/box of chickpeas
1/2 cup red lentils
3 cups of chopped pumpkin
1 onion
2 cloves garlic
1 can coconut cream
1 can of water (use empty coconut cream can)
350-400g Passata OR can of chopped tomatoes
1 stock pot (I used beef but chicken or vege would be great)
1 tbsp mild curry powder
1/4 tsp cayenne pepper
1-2 tsp smoked paprika
1-2 tsp cumin
1/2 tsp allspice
salt & pepper to season
chopped parsley to garnish (optional)
Place chopped onion and garlic over low heat in large pan and gently fry off until onions start to caramelise.
Add spices and stir through
Add chopped pumpkin, broccoli and chickpeas and stir through.
Add in your liquids - coconut cream, water, passata and stock pot and give a good stir. The liquid should cover all of the vegetables. If not add a little more liquid here.
Add half a cup of well rinsed red split lentils. These will add extra protein and thicken up the curry.
Cover with a lid and bring to the boil. Allow to simmer for half an hour on low checking occasionally and stirring).
Take the lid off and continue to simmer until curry thickens up and you have the desired consistency for your curry.
Stir through parsley if using (fresh coriander is also a winner!) and season with salt and white pepper to taste.
Serve with rice of your choosing, jacket potato or on its own in a big bowl!
I have made this with sweet potato instead of pumpkin and it's just as amazing.
